Swiss Hotel School South Africa is proud to present its new program for Professional Chefs

Don’t let the title fool you – this programme is designed for Professional Chefs making the step up into a management position within the kitchen.

This is a two year, part-time course requiring the commitment of 4 school days every 2 months and setting aside study time while still in employment. Ideally undertaken with the support and financial assistance of the employer, this final element in the Professional Chef Programme tackles 10 modules ranging from Resource Management and Leadership to F&B Marketing and Financial Control.

Building on craft based learning this programme addresses:

• Food cost control
• Menu development
• Taking responsibility for safety and hygiene
• F&B Sales and Marketing
• Production management and control
• Professional purchasing
• Improving labour productivity

In other words – all those areas fundamental to running a kitchen efficiently and profitably.

Who should apply?

Chefs de Partie, Sous Chefs, Kitchen Supervisors, Food Entrepreneurs, Caterers and Small Business Owners, looking to move into or having recently taken up positions which require managerial skills.
