Culinary Lecturer – Hot Kitchen for one of the top Culinary Institutes in South Africa.
The ideal candidate will have a minimum qualification of a Diploma in Professional Cooking from a reputable training institution, and at least four years industry experience in the Hot section of four and five star kitchens. Teaching experience and Assessor qualification will be a bonus. The ideal candidate must be confident with classic and contemporary techniques for meat, fish, seafood, vegetables, rice and grains, starches, soups, stocks and sauces. Substantial theoretical knowledge and strong practical skills are required for this position. The ideal candidate will also be able to teach subjects in kitchen management and global cuisines. Teaching includes professional as well as short courses. The Institute also has a fine dining onsite restaurant and the culinary lecturer candidate should expect to also work occasional shifts in the restaurant and to assist with menu planning for the Hot Kitchen menu. Professional manner, positive attitude and a passion for food are non-negotiable. As this is a teaching position, the candidate must have good communication skills, be a confident speaker and enjoy working with the youth.
